- 20 gr of cacao powder
- 60 gr of oat flour
- 2 tablespoon of flax meal
- 2 tablespoons of stevia
- 100 gr of strong brewed coffee
- 2 tablespoon of coconut oil
- pinch of himalayan salt
- 1 teaspoon of baking powder
- 1/2 baking soda
- 1 tablespoons of cyder vinegar
- 25 gr of blackstrap molasses
- preheat the oven to 180 degrees Celsius
- meanwhile combine oat flour, stevia, cacao, salt and flax meal
- whisk together all liquid ingredients: coffee, molasses, coconut oil and vinegar
- pour liquid ingredients over dry, mix till everything just comes together
- now working quickly add baking powder and baking soda, fold just until incorporated, the dough will start the to bubble and expand straight away.
- pour in prepared muffin tins, bake approximately 13 min. check if the tooth pick comes out clean, they are done.
