I’m not a chocoholic and never really was,I love chocolate but I always was a fruit kinda girl;) and like to stay faithful to myself so my favourite way to eat these muffins it’s to break it in lots of small pieces and top it with a lot of fresh cut strawberries so the juice from the strawberries mixing up with chocolate pieces brings it to next level of deliciousness.

Chocolate molasses muffins

Ingredients

  • 20 gr of cacao powder
  • 60 gr of oat flour
  • 2 tablespoon of flax meal
  • 2 tablespoons of stevia
  • 100 gr of strong brewed coffee
  • 2 tablespoon of coconut oil
  • pinch of himalayan salt
  • 1 teaspoon of baking powder
  • 1/2 baking soda
  • 1 tablespoons of cyder vinegar
  • 25 gr of blackstrap molasses

Instructions

  1. preheat the oven to 180 degrees Celsius
  2. meanwhile combine oat flour, stevia, cacao, salt and flax meal
  3. whisk together all liquid ingredients: coffee, molasses, coconut oil and vinegar
  4. pour liquid ingredients over dry, mix till everything just comes together
  5. now working quickly add baking powder and baking soda, fold just until incorporated, the dough will start the to bubble and expand straight away.
  6. pour in prepared muffin tins, bake approximately 13 min. check if the tooth pick comes out clean, they are done.
