Peppermint coconut fudge

   Some days are just too grey and you need a pop of colour, some days you are craving something sweet and indulgent, but yet healthy.


  Well this fudge is a perfect answer. It feels rich but peppermint makes it refreshing and helps with digestion. All the superfoods that I used are great for your body since they are extremely hight in antioxidants, detoxifying, rich in vitamins and immunity boosting. Of course you can use just one and create purple or pink or yellow treat. World is really your oyster:) You can even leave them plain they will be equally delicious anyway.


They are extremely easy to make as well, fun to eat and amazing as a present!

Peppermint coconut fudge


  • 50 gr coconut butter
  • 100 gr full fat coconut milk
  • 30 gr liquid sweetener
  • 2 drops peppermint essential oil(make sure that its eatable)
  • 1 tablespoon maqui powder
  • 1/2 tablespoon spirulina
  • 1/2 tablespoon barley grass powder
  • 1 tablespoon of lucuma


  1. Warm up coconut butter till its in the liquid form and mix with coconut milk, sweetner and peppermint oil.
  2. Divide batter into four separate bowls and add superfood to each of them.
  3. Refrigerate them for 30 min before layering. I started with maqui layer followed by lucuma since I used more powder in that ones and they are more solid. Using silicone containers recommended because it will be very easy to get fudge out like this. Otherwise just line any container with a plastic wrap and this will do the trick.
  4. P.S. if you are new to superfoods maybe its best to start with teaspoon worth or even less depends on your taste. Always start small and work your way up. In this case cut down coconut milk to 70 gr.
