Raw carrot and caramel slice



     Sometimes you need something extra delicious in you life to get you through the stressful time or reward after a long day.

     I’m not recommending stress eating but the food is the greatest medicine available to the men and has to be treated like one. Chocolate has been known for awhile as a mood booster and antioxidant bomb, the caramel will provide that extra sweetness that we need sometimes in our lives and it will be all balanced with a delicious base that even has a veggie inside. So you know you will feel good after eating one of these slices;)

Raw carrot and caramel slice


  • caramel layer
  • 200 gr dates soaked in 200 gr of water(preferably overnight )
  • 40 gr coconut oil(I used @bionaorganiv)
  • 40 gr cashew butter (I used @rawhealthorganic)
  • 40 gr coconut chunks
  • Pinch of sea salt
  • Carrot layer
  • 100 gr carrot finely grated
  • 50 gr of apple finely grated
  • 3 tablespoons chia seeds soaked in date water remaining after making caramel (I use @rawhealthorganic)
  • 70 gr coconut chunks
  • Zest of one orange
  • Chocolate layer
  • 40 gr cacao powder
  • 40 gr coconut oil
  • 40 gr cashew butter
  • 2 tablespoons coconut nectar(or your preferred sweetener)


  1. For caramel layer
  2. Drain dates reserving soaking water for later, blend till smooth with the rest of ingredients except of coconut, stir in coconut and pulse few more times, refrigerate till needed
  3. Carrot layer
  4. Process everything till batter comes together in a bowl, pieces of coconut may still be visible and it just will add grate crunch and mouthfeel. Dehydrate overnight or bake at the lowest temperature in the oven for 2 hours
  5. Chocolate layer
  6. Mix everything in a bowl and leave at the room temperature till needed
  7. To assemble take your carrot cookie then spread caramel and then top with chocolate cream. You can do it in one go if you are careful but if you don't have a steady hands is best to refrigerate before putting layer.
  8. Drizzle more raw chocolate on top if desired
