Instructions
  1. Chop onion and garlic finely
  2. And aubergine and carrot into bite-size pieces
  3. Preheat the pan on the medium heat
  4. Add oil of your choice
  5. Saute garlic and onion until translucent
  6. Add spices and fry till fragrant
  7. Add carrot, a pinch of salt and give it a stir,
  8. Lastly add aubergine, season it with salt and Black pepper and cook for a couple more minutes
  9. Add rinsed lentils to the pan, give it a stir so they will become coated with spices
  10. Pour the content of tomato can to the pan and fill the empty can with water 2 times and empty it to the pan
  11. Mix everything together and cook for 20 minutes on the medium heat or till most of the liquid has evaporated and lentils are cooked
  12. Add a teaspoon of maple syrup and check it for seasonings
  13. Adjust if needed and serve it with rice and a squeeze of lime if desired
