
These cookies are gluten-free, vegan and refined sugar-free and absolutely delicious.

So easy to make them and only a handful of accessible ingredients required! I used oat flour which you can simply make at home by grinding whole oats. It is much fresher and much cheaper this way and since these cookies are practically made from oats I think they are perfectly acceptable for the breakfast:)

But definitely indulgent enough for dessert! Crispy edges, amazing crumb and melting chocolate in the middle…What not to love?

And the best thing… because there is no animal products and no raw flour involved you can try the dough before baking and adjust sweetness just to your liking! But be careful not to eat half of it just like that… I had a hard time stopping after multiple taste taste-tests so you have been warned:)
- 160 grams oat flour
- 30 grams of granulated sugar or stevia blend
- 60 grams of maple syrup
- 50 grams coconut oil
- 1 tbsp of flax meal
- 50 grams of chocolate chips
- 3/4 tsp of baking soda
- splash of apple cider vinegar or lemon juice
- First mix flour, baking soda, flax meal and granulated sweetener
- Add 3 tbsp of water, soft coconut oil and maple syrup and stir to combine
- Add chocolate chips and a splash of apple cider vinegar and mix just till everything is incorporated
- Let the dough rest for 15 minutes
- Form the cookies and bake in preheated oven for about 15 minutes or till golden brown
- Let them cool completely on the baking tray! They will crisp up as they cool
