  1. Roughly chop the courgette and shallot, remove the leaves from rosemary sprig and combine in the blender with the rest of the ingredients and 1/2 cup of liquid to start with.
  2. Blend on high until completely smooth.
  3. Taste, adjust seasonings and thin it out more if needed.
  4. Continue blending till warm or transfer to a saucepan and warm up gently over low hit.
  5. Serve with your favorite toppings
