Strawberry protein cake

   Any time for me is a good time to eat cake. And with such a huge sweet tooth I have to be elaborate to maintain the healthy lifestyle and have my cakes that aren’t an optional part of my day:) Little slices of this deliciousness is a true way to my heart so as fresh fruits! I think I could be very happy on the land where mangoes grow :)  And just recently I spotted beautiful star fruit on the farmers market and I just knew that I had to make something special with it. So this recipe was born and its a very delicious one! 

   This cake is so easy to make, looks impressive and still super healthy! I even added protein to make it more of the balanced treat and I workout regularly so that makes it a postworkout cake for me.. not too bad huh..?

   The combination of strawberry and star fruit in the filling adds such a burst of freshness but you can, of course, chose the fruits that you like the best and have on hand at the moment. The frosting is super creamy but still light and the cake is super fluffy. I really recommend this one:)

For the frosting

Instructions
  1. Mix all the ingredients together and let it sit while you preheating your oven to 180 degrees.
  2. Pour the batter into the prepared baking tin and bake for 25-30 minutes or till toothpick comes out clean.
  3. Let it cool completely before frosting.
  4. Blend fresh strawberries with coconut cream and coconut sugar and let it sit on in the fridge to set slightly(this option is optional)
  5. When ready to frost slice the cake into 2 or 3 layers add sliced berries to each of them and cover with a frosting.
