  1. Grate the potatoes and place them and the onion on the middle of the clean tea towel and twisting the edges squeeze as much liquid out of them as possible
  2. Transfer the grated potatoes to the bowl, add flour and season with salt and pepper
  3. Try squeezing the mixture in your hand, it shouldn’t be wet, to get the right texture add an extra tbsp of flour.
  4. Heat the pan on the medium heat and add a drizzle of olive oil to the pan
  5. Take a spoonful of the dough and form a latke
  6. Add to the pan and gently press with a spatula down
  7. Form on the both sides till golden brown
  8. Traditionally served with sour cream (you can easily make your vegan version)
