Nothing is better than cookies for breakfast! And this recipe can’t be any more simple. 2 ingredients only! It is vegan and gluten-free, takes 2 minutes to put together and the result is absolutely delicious:)
Although it is only two main ingredients, as I said earlier, you can add various toppings and get a different flavour every single time. My favourite additions include nuts, berries, chocolate and peanut butter. You can use fresh or frozen berries, both options work, and it is just the question which is easier for you.
They honestly make the best easy breakfast on the go or wholesome afternoon snack. If you decide to add peanut/almond butter, you can add a dollop on top of the cookie, so it becomes a soft centre cookie(yum!) or stir it in the dough (it will give cookies delicious nutty flavour!)
You can store them for a couple of days in the fridge, or they freeze very well. Then whenever you are craving a warm cookie, the only thing you need to do is to pop it into the toaster or microwave for a couple of minutes!
2 ingredients healthy breakfast cookies
- 2 ripe bananas
- 100 grams of oats
- Mash bananas and combine them with oats
- Take a spoonful fo the dough and form a cookie
- Add any toppings of your choice if desired
- Bake in preheated to 180 degrees oven for 12-15 minutes or till golden brown
