DESSERT FOR BREAKFAST THAT WILL MAKE YOU FEEL GOOD
This chocolate chip cookie dough baked oats is like eating a dessert for breakfast! And nothing is better than a healthy dessert for breakfast, especially when it involves gooey, melted chocolate!

It’s naturally gluten-free if you use certified gluten-free oats and high in protein. Addition of cashews will make baked oats creamier and it the final result will taste richer without the need to add oil.

BAKED OATS AS A HEALTHY BREAKFAST OR POST WORKOUT SNACK

ADD PROTEIN SO YOU CAN STAY FULLER FOR LONGER
I added vegan vanilla protein powder to boost the nutrition and protein content. And I highly recommend doing that because you will stay fuller for longer. SUBSTITUTION FOR PROTEIN POWDER AND BANANA
If you don’t have protein powder or you just don’t want to add it you can replace it with an equal amount of oats or cashews for a richer taste. In this case you will probably need to increase the amount of sweetness overall. There are two options how you can do that without compromising the texture of baked oats. First option is adding about 2 tbsp more maple syrup while decreasing coconut milk by 2 tbsp. Second is adding stevia to taste or sugar of your choice. Best thing about this recipe is since it’s vegan and we aren’t using the raw flour, you can certainly try cookie dough oats before baking and regulate the sweetness to your liking. On the other hand, if you don’t want to use banana you can use apple sauce instead or even your favourite yoghurt. It will be just as delicious!
Chocolate chips Cookie dough baked oats
- 150 g oats
- 60 g cashews
- 1 1/2 scoop of vanilla protein powder
- 1 banana
- 170 g coconut milk
- 4 tbsp maple syrup
- 1 tsp baking powder
- 50 g chocolate
- Preheat the oven to 180 degrees Celsius
- Add all the ingredients, except chocolate, to the blender and pulse a few times till everything is relatively smooth(some texture is ok as soon as there are no big chunks of banana)
- Transfer to the lined baking dish and sprinkle with chopped chocolate
- Bake for 25-35 minutes or till the top is golden brown and edges are coming off the sides of the baking dish.
- Optionally sprinkle more chocolate on top so it melts while the cookie dough oats are still hot
- Serve straight away or save for later.
