The roasted pepper sauce is savory, packed with goodness and it’s so creamy. Even though we aren’t using any cream to make it. Roasting veggies in the oven adds a different dimension to the flavour profile. It gives it just a slight smoky note which I love. I decided to use creamy plant-based yoghurt to make the sauce extra smooth. Moreover tanginess of the yoghurt works so well with natural sweetness of red pepper and onion. In short, this roasted red pepper pasta is hard to resist.
The way to make vegan red pepper pasta sauce extra creamy
I used thick coconut yoghurt because it’s the creamiest. However you can use any unsweetened yoghurt that you like, and add a touch of olive oil to the sauce to make extra luxurious.
On the other hand, good substitutions would be
- Your favourite creamer
- Canned coconut milk
- Unsweetened homemade or store-bought plant-based milk
Certainly, you can pick the option that works the best for you. However, if you decide to go with any of these substitutions, I recommend adding a squeeze of lemon juice to balance out the flavour.

I love using lentil pasta to pair with this creamy red pepper sauce. It’s delicious, nutritious and very satisfying. In addition, it makes this dish gluten-free and high in plant protein. You can certainly use you favourite pasta gluten-free or not to make this dish. As well as it’s fun to experiment with different pasta shapes. For a lighter low carb dinner spiralized zucchini is a great option. As a bonus it will make this meal extra heavy on veggies hence more nutritious. However In this case to make it more filling I would add a protein source. Grilled tofu is my favourite:)6
