Why use coconut butter as the base for healthy easy coconut truffles
I used coconut butter as a base of this easy recipe for several reasons. Firstly, coconut butter has the unique ability to turn into liquid when it’s warm so it is super easy to mix it with the rest of the ingredients. Secondly, it sets beautifully when it’s chilled. That means our coconut truffles will hold their shape perfectly. Besides that, coconut butter adds so much creaminess here.
What would happen if we would use dry desiccated coconut instead of butter in this recipe? Although these vegan coconut truffles would still turn out delicious the texture would be completely different. Not only it would be more flakey rather than creamy but we would also need to use more liquid sweetener for them to hold.
