Instead of flour, we use oats
To keep this recipe gluten-free I used rolled oats. In contrast to bleached flour which doesn’t have many nutrients left, rolled oats are nature’s powerhouse. They are full of vitamins, minerals, fibre and antioxidants. This banana bread is truly a dessert with benefits. Moreover, you don’t even need to buy oat flour because it’s so easy to make it at home and it takes only about 60 seconds as well. Simply add your oats to the blender and let it work for a minute and here you have it!
The easiest recipe for vegan banana bread
What makes this banana recipe so easy is that the only bowl that we need is our blender jug. I always start with my wet ingredients and sugar or sweetener and only after I get a smooth consistency I add my oats. This way you will get the best texture. The only thing that you need to look out for is NOT to over blend. It should take less than a minute. If you are going to continue blending for longer you may end up with porridge in your blender as opposed to the raw banana bread batter. And remember only pulse a few times after you add your walnuts and chocolate in. This way you will get that perfect crunch from nuts and the creaminess from the chocolate chunks.
As you can see in the video, you don’t have to prepare the oat flour in advance if you decide to use a blender. But in case if you don’t want to use it or you don’t have it you can do everything by hand. Start with mashing bananas, then add coconut milk(or any milk of your choice) and follow with store-bought oat flour and the rest of the ingredients!

Easy Flourless Vegan Banana Bread/Gluten-free
- 160 g rolled oats
- 2 ripe bananas
- 140 g coconut milk
- 1 tbsp flax meal
- 70 g sugar or stevia
- 1 1/2 tsp baking powder
- 1 tsp apple cider vinegar
- 1 tbsp cinnamon
- 70 g walnuts(optional)
- 40 g chopped chocolate(optional)
- In the blender, combine bananas, coconut milk, and sweetener(or sugar)
- Blend till smooth
- Add the rest of the ingredients except walnuts and chocolate and blend for 30 more seconds until combined.
- Add walnuts and chocolate and pulse few more times to break the bigger pieces down.
- Pour in the baking tin and bake for 35 minutes or till golden brown and toothpick inserted into a centre comes out clean.
