Smoky parmesan corn on the cob is the perfect vegan/vegetarian side dish. The corn is coated in spices then grilled (or roasted) until deliciously smoky. In addition to this then it sprinkled with freshly grated parmesan cheese. They are few options on how to make it vegan as well:) Overall it’s super easy to make and a healthy side dish that everyone loves!

Parmesan corn on the cob is a perfect example of how delicious is the combination of salty and sweet in the recipe. Let me explain!
First, the corn itself is sweet and juicy.
Then you add all the amazing spices to it. Smoky paprika, garlic and cayenne work in beautiful symphony to enhance the natural flavour even more.
Next, the corn is grilled or roasted which helps to develop the flavour. You can definitely make this recipe in the oven if you don’t have access to the barbeque. In this case, to boost the flavour just put the corn under the grill for the last few minutes. It will be just as deliciously smoky.
Immediately after the corn comes from the grill you have to sprinkle it with grated parmesan. Part of it will melt into the corn and part will stay on top like a light fluffy cloud. All the steps above will make this side dish absolutely irresistible.
How to make this side dish vegan
There are a few options for how you can make the perfect parmesan corn on the cob vegan and dairy-free. First and the easiest would be simply to use vegan parmesan cheese. There are a few really good brands on the market now. Violife is probably my favourite!
The second option is to make your own vegan cheese. Of course, I have probably a dozen recipes for it(I love cheese!). In this particular dish, I think the combination of ground cashews with a pinch of garlic and onion powder and a hefty sprinkle of salt would be absolutely delicious! To make it extra cheesy ingredient called nutritional yeast is super handy. It is completely vegan and rich in B12! Honestly, you can sprinkle it on top of everything starting from popcorn to your stews or salads of that extra oomph.
5 minutes healthy side dish
Overall this healthy side dish probably takes 5 minutes to put together. So simple! But it is such a crowd-pleaser and it’s so versatile as well! I can eat this parmesan corn on the cob just on its own as my meal. And that would make me happy. Moreover, you can serve it with anything else that you are willing to grill like veggie kebabs or vegan steaks and that would be a match made in heaven.
Parmesan corn on the cob
- 3 corn on the cob
- 1 1/2 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp cayenne
- 1 tsp mixed herbs
- black pepper
- flaky salt
- 1 tbsp olive oil
- 1/2 lemon
- 2 tsp maple syrup
- parmesan for grating on top
- fresh herbs
- Mix all the spices together, add olive oil, lemon juice and maple syrup
- Whisk it together
- Brush the corn with prepared dressing making sure that is coated on all sides
- Cook on the barbecue or under the grill till golden and tender(mine took about 20 minutes)
- Grate parmesan on top and sprinkle with herbs if desired.
