Why do you need to add these raspberry baked oats to your breakfast menu?
This delicious Easy Raspberry Baked Oats recipe is the perfect healthy breakfast dish. Baked oats is one of my favourite breakfasts to have for a few reasons. Most importantly, it’s nutritious and so easy to make ahead of a busy day/week as a part of meal prep. Secondly, you can easily customize it depending on what you have in the fridge. Lastly, it’s so simple to make great tasting baked oats to suit both vegan and gluten-free diet.
Baked oats are a great breakfast option for meal prep
First of all, worth mentioning that these raspberry baked oats are the ultimate morning comfort food that is perfect for colder days. You can make it as a single serving breakfast or just cook a big batch. Keep it in the fridge and enjoy for a few days this delicious, healthy and satisfying breakfast!
It’s equally delicious hot or cold
Secondly, certainly, when baked oats are so good when they just came out of the oven! However, you can reheat your portion of raspberry baked oats when you are about to eat if you cooked it the day before. It will be equally as delicious! It takes about 10 minutes in the oven or just 60 seconds in the microwave! On the other hand, for a snack, I simply prefer them cold and sometimes for breakfast. That is to say; I love both of these options and alternate between them based on my mood:)
My favourite way to serve them is with a dollop of greek style yoghurt and juicy raspberries and blueberries! Absolutely delicious!
You can use fresh or frozen raspberries for your raspberry baked oatmeal
You can make this recipe using any berries that are available to you. Fresh or frozen:) I tend to lean towards frozen actually for my baked goods as there is no difference taste-wise and they are much more affordable this way.
Delicious vegan breakfast with a vitamin boost
Today I had raspberries in my freezer and since I love them so much I thought I’d make a Raspberry Baked Oats. As a result, we have creamy oats, naturally sweetened with apple juice and bursting pockets of little raspberries bring so much flavour! Really, really good.
Raspberries are really high in antioxidants, vitamins and oats are high in fibre making it a hearty, healthy and delicious breakfast.
To sum up, if you top this bake with flaked almonds which will become crunchy when baked and melted chocolate… You will literally have a dessert for breakfast.
Raspberry Baked Oats vegan and gluten-free
- 250 g oats
- 2 tbsp flax meal
- 600 g juice (or use almond milk+sweetener)
- 150 g raspberries
- 50 g almond flakes
- 1 1/2 tsp baking powder
- chocolate to decorate
- Mix oats, flax meal and baking powder and pour the juice over
- Transfer it to the baking tin lined with baking parchment and sprinkle the raspberries and almond flakes over
- Flatten it slightly with the spoon
- Place the oats in preheated to 180 degrees oven
- Bake for 25 minutes or till golden brown on top
- While it still warm add your chocolate on top and return to the oven which has been switched off
- Allow chocolate to melt for 3-4 minutes
- Serve straight away or allow it to cool, cut it and store in the fridge in the airtight container
