3 ingredients coconut cookies

These cookies only have 3-ingredients, they are healthy, delicious and super easy to make. Combination of banana and coconut creates the perfect chewy texture and edges crisp up beautifully in the oven! What more can you ask from a perfect healthy cookie?

These coconut cookies are naturally vegan, dairy and gluten-free so everyone can enjoy them!

I’m sharing below the most straightforward recipe which is only fruit sweetened. I wanted to create a healthy cookie that would make a delicious snack and these coconutty treats are so good when you just want something small on the afternoon to pick you up. But if you want them sweeter, you can add 2 tbsp of maple syrup and a pinch of vanilla seeds.

Add your favourite jam in the middle to jazz things up and get a different flavour every time. Homemade healthy chia jam is an absolutely delicious option.

Or even leave the cookies plain and add a piece of chocolate once they come out from the oven. Residual heat from the cookie is enough to melt the chocolate and once the cookies will cool the chocolate will harden.

Instructions
  1. Mash banana, add coconut and stir together
  2. Form cookies and add a raspberry in the middle
  3. Bake in preheated to 180 degrees oven for 10-15 minutes or till edges are golden
