We all need to celebrate more little things in life because they are the ones that matter!
So today I’m celebrating Friday with this super delicious layered parfait! It feels very indulgent like you are eating dessert for breakfast My favourite kind of breakfast by the way:) But really this parfait is packed with protein, minerals and antioxidants! So good on a rainy day like this!
Ingredients
Chia layers
- 150 grams almond or cashew milk
- pinch of vanilla powder
- 1 tbsp maple syrup
- 3 tbsp chia seeds
- 3 tbsp coconut yoghurt
- berry powder to colour optional
For chocolate layer
- 100 grams silken tofu
- 1 tbsp chia seeds
- 2 tbsp raw cacao
- 1 tbsp maple syrup
- zest and juice of an orange
Servings: person
Instructions
- In one bowl mix all the ingredients for chia pudding and set aside to thicken(15 to 30 minutes)
- In the blender or food processor blend all the ingredients for chocolate mouse till completely smooth.
- Divide chia pudding between two bowls and colour them with your berry powder(optional) or you can add mashed berries as well to flavour it.
- Layer the chia pudding and top with chocolate mousse and fresh berries if desired
