This pasta is super quick to make and fun to eat.

Ingredients
- 80 gr gluten free pasta
- 1 medium medium carrot
- 50 gr gr black olives
- 1 medium avocado
For the sauce
- 50 gr gr white beans
- 1 small small cooked beetroot
- 1 lemon juice and zest
- 3 tablespoons water
- 5 springs thyme
- 1 clove garlick small
- 1 tablespoon nutritional yeast optional
- pinch salt

Instructions
- In the pot with boiling water add your pasta and thinly sliced carrot and cook according the packet instructions. Take from the heat 1 minute before the time when it should be ready drain, reserving little bit of cooking water.
- Meanwhile blitz all the ingredients for a sauce in the food processor and as soon pasta is ready stir in the sauce. Reserve few carrot slices for decoration if desired. Use cooking water one tablespoon at the time to loosen it up if needed.
- Serve with olives, top with reserved carrot slices, sliced avocado and your favourite herbs.
Recipe Notes
I used hemp seeds to sprinkle for extra texture, protein and omega-3-6 and greek basil for extra flavour
