Raspberry Baked Oats

This delicious Easy Raspberry Baked Oats recipe is the perfect healthy breakfast dish. A no-stir porridge, or baked porridge, is one of my favourite breakfasts to have. And it is so easy to make ahead for a busy day/week as a part of meal prep.

It is the ultimate morning comfort food that is perfect for colder days. You can make baked oats as a single serving breakfast or just cook a big batch, keep it in the fridge and enjoy for a few days this delicious, healthy and satisfying breakfast!

You can reheat baked oats when you are about to eat them in the oven or microwave or simply enjoy them cold. I love both of these options and alternate between them based on my mood:)

My favourite way to serve them is with a dollop of greek style yoghurt and juicy raspberries and blueberries! It’s so good!

You can make this recipe using any berries that are available to you. Fresh or frozen:) I tend to lean towards frozen actually for my baked goods as there is no difference taste-wise and they are much more affordable this way.

Today I had raspberries in my freezer and since I love them so much I thought I’d make a Raspberry Baked Oatmeal. Result is creamy oats, naturally sweetened with apple juice and bursting pockets of little raspberries bring so much flavour!  Really, really good. And they are really high in antioxidants, vitamins and oats are high in fibre making it a hearty, healthy and delicious breakfast. If you top it with flaked almonds which will become crunchy when baked and melted chocolate you will literally have a dessert for breakfast!

Instructions
  1. Mix oats, flax meal and baking powder and pour the juice over
  2. Transfer it to the baking tin lined with baking parchment and sprinkle the raspberries and almond flakes over
  3. Flatten it slightly with the spoon
  4. Place the oats in preheated to 180 degrees oven
  5. Bake for 25 minutes or till golden brown on top
  6. While it still warm add your chocolate on top and return to the oven which has been switched off
  7. Allow chocolate to melt for 3-4 minutes
  8. Serve straight away or allow it to cool, cut it and store in the fridge in the airtight container
