Easy delicious gluten-free and vegan fluffy chocolate chip pancakes. You only need a handful of simple ingredients to make them. Not only they are perfect for a weekend brunch but also for a healthy vegan breakfast any day of the week really.
In only 15 minutes, you can be eating these fluffy and tender vegan pancakes! They taste like a dessert, but they are made from simple, wholesome ingredients. Indeed, this is a feel-good recipe. I added chopped chocolate which I think to take these pancakes to another level of deliciousness. Alternatively, feel free to leave them out or swap them for blueberries.
I decided to make mini vegan fluffy chocolate chip pancakes for three reasons. Firstly, I think they are more fun to eat. secondly, they cook much faster. Lastly, you can fit more of them in the pan if they are smaller so that means that you will be done with cooking faster.
When it comes to toppings I usually go with fresh fruits and a dollop of plant-based yoghurt. Sometimes as well I love to sprinkle chopped chocolate on top. When pancakes are still warm the chocolate will melt almost instantly and it is so delicious. To make these vegan fluffy chocolate chip pancakes feel even more like a dessert you can add coconut whipped cream on top. Another option would be to drizzle it with almond butter sauce.. so good!
*For almond butter sauce. Mix together one tbsp of almond butter, 1-2 tsp of maple syrup, a pinch of salt. You can warm it up to make it more pourable.
Not only these pancakes are delicious, but also they are light and fluffy, good for you, and you can whip them up so quick! Moreover, they are extra chocolatey and so tender. I prefer using here gluten-free blend rather than any other flour because that makes them lighter. However, if you want to make them even more wholesome, feel free to swap gluten-free mix for homemade oat flour.
These pancakes make perfect weekend brunch, but since they only take about 15 minutes, I sometimes make them on Monday. Because you know we all need that little bit extra motivation on Monday sometimes:) And delicious vegan fluffy pancakes are just perfect to start your day/week in the right way.
They are freezer friendly as well. Certainly, you can make a bigger batch on the weekend and freeze leftovers for the weeks ahead. This way, when you feel like pancakes, the only thing you have to do is to take them out of the freezer and warm them up. I usually do it in a toaster oven.
Vegan fluffy chocolate chip pancakes
- 80 gr self-raising gf flour mix
- 30 gr yoghurt
- 60 gr milk
- 1 tbsp melted coconut oil
- 1 tbsp maple syrup
- 20 gr chopped chocolate
- Mix all the ingredients together till you get a smooth batter
- Preheat the pan on the medium heat
- Spray or lightly brush it with coconut oil
- Add a spoonful of the dough to the pan
- Allow the edges to dry completely and then carefully flip the pancake( repeat with the rest)
- Cook for 30 seconds longer or till golden brown and transfer to the plate
- Serve with your toppings of choice
