These gingerbread cookies are vegan, gluten-free and refined sugar-free! You can even make them almost entirely sugar-free by using stevia instead of brown/coconut sugar:)

They are delicious, crispy with amazing flavour coming from all the warming spices and that satisfying snap when you bite into them! You can use a combination of ginger and mixed spice only to create that unique aroma, but because I love cinnamon, I added here extra and I highly recommend to do so.

Baking your healthy gingerbread cookies means that more people can enjoy them, get that festive spirit and feel great about it! You can make your healthy icing as well by mixing liquid sweetener and cashew butter or another option is to mix coconut oil and your favourite powdered sweetener. Personally I vote for the first option:)

And of course, the best part about baking your gingerbread cookies is that you can decorate them! It is a great bonding activity and such a relaxing time together, especially with little ones! But I have never met a person who wouldn’t like decorating(and eating!) healthy cookies around this time of the year:)

Vegan gluten-free gingerbread cookies

  • 150 grams of gf flour
  • 50 grams of coconut oil
  • 50 grams of brown sugar or stevia
  • 1 tbsp of flax meal+ 3of water
  • 2 tbsp of molasses
  • 1 tsp of baking powder
  • 1 1/2 tsp of ginger
  • 1 tsp of mixed spice
  • 1 tsp of cinnamon
  • Pinch of salt


  • Mix everything and knead the dough just till it comes together
  • Cover and let it rest for at least 30 min(overnight is best)
  • Roll it thinly and cut out cookies of your desired shape
  • Bake in preheated to 180 degrees oven for 7-8 minutes or till golden
  • Leave on the tray to cool completely
  • They will get crisper as they cool
  • Decorate if desired
