YOU ONLY NEED THREE MAIN INGREDIENTS FOR RASPBERRY VEGAN SOFT SERVE
As soon as it starts to warm up outside, smoothie bowls are becoming my daily staple. They are not only very nutritious but also delicious! Also, the list of flavour combinations that you can try is possibly endless. This time I decided to do a very simple but beautiful Vegan Raspberry Soft Serve smoothie bowl. It is bursting with goodness and flavour. Moreover, you only need three ingredients to make this delicious vegan snack or breakfast.
NUTRITIONAL FACTS FOR RASPBERRY NICECREAM BREAKFAST BOWL
This vegan raspberry soft serve is a great light alternative to your usual ice cream. It is super creamy sweet, and the flavour is bright and candy-like. Yet, the main ingredient here is the frozen banana. That means that by eating your candy, you will get a dose of Potassium, fibre and Vitamin C and B6. A win-win situation if you ask me.
*Tip. Make sure you only freeze the bananas that are ripe and have lots of brown spots. Green or green-yellow bananas are still too starchy, and they won’t blend into the silky-smooth vegan soft serve nicecream.
The tangy raspberry works great in combination with ripe and sweet banana here. It also gives a nutritional boost as it is high in fibre, vitamins, minerals and antioxidants.
WHY THE ADDITION OF COCONUT YOGHURT IS A BETTER OPTION HERE THAN ADDITION OF MILK OR WATER
The last ingredient for this vegan raspberry soft serve is coconut yoghurt. I used it here mainly for three reasons. Firstly, it will give this nicecream bowl the silkiest texture. Secondly, it is an excellent source of gut-friendly probiotics. Thirdly, for the blender to start working, it needs some sort of liquid, so the yoghurt will help things to go smoothly.
The creamier coconut yoghurt, the best will be the final texture and taste of this smoothie bowl. My favourite option here is the brand called Coyo, especially their vanilla coconut yoghurt. It’s thick and delicious, has real vanilla and made with only three main ingredients. You can use your favourite brand here. Just make sure that it’s not too runny as it will water down your nicecream.
BANANA AS A BASE FOR A VEGAN SOFT SERVE
Frozen banana makes a perfect base for a creamy smoothie bowl or also known as nicecream bowl. And that is for a reason. Unlike most fruits, when frozen banana doesn’t crystalise, meaning it will produce the silkiest, smoothest texture when blended. Nicecream is a super trendy word now, but we can only guess how it was created. My theory is that because these smoothie bowls are always creamy and they look like soft serve, but actually, they are really good(nice-cream:)) for you.

Vegan Raspberry soft serve/nicecream bowl
- Blender or food processor
- 2 frozen bananas
- 40 gr frozen raspberries
- 1 heaped tbsp coconut yoghurt
- Add all ingredients to a blender or a food processor and process till smooth
- Serve straight away with your favourite toppings
