This vegan watermelon feta salad is refreshing, healthy and easy to make. Moreover, it is a light, quick meal that is not only nourishing but delicious as well. Let’s make it together.
The ingredients that we need
First of all, we need to start with watermelon! The sweeter and fresher your watermelon will be, the tastier salad you are going to get. The best trick to pick sweet fruit is to look for these signs
- The more contrast the strips on the watermelon have, the better(green should be dark green)
- It should sound hollow when you tap it
- Try to get watermelon with the bright yellow spot
- The watermelon should feel heavier than its size
- A dried tail normally shows that the watermelon is ripe
Now let’s move to the second main ingredient- Vegan Feta. You can make your own in numerous ways, or you can use the one from the store. The third ingredient in my vegan watermelon feta salad is a cucumber. It brings so much freshness, and it feels very hydrating in this salad. Personally I love the combination of crunchy cucumber, crisp watermelon, slightly tangy vegan feta and creamy avocado. It is so good!
And that brings us to the fourth ingredient. Lastly, we have here a creamy avocado. I prefer to mix 3/4 of the avocado with the rest of the ingredients, and here is the reason why. If the avocado is ripe, you will probably smash some pieces, and they will almost become part of the dressing. In fact, I do prefer when it happens as it will add creaminess to the finished watermelon salad. But it is certainly nice to have the whole chunks of avocado as well. The same goes for our vegan feta. Therefore, I only sprinkle it on top after I mixed all the ingredients already.
Finally, I like to garnish my salad with extra basil leaves. I do think that it makes it look beautiful. In case if you are feeling creative, you can play and use different herbs as well. I believe oregano or mint would bring a wonderful note to the overall flavour of this salad.
The dressing for the watermelon feta salad
The dressing for this vegan watermelon feta salad is just as simple to make. All you need to do is to combine all the ingredients for it and refrigerate until needed. In my opinion, it tastes even better the day after, so you can make it a day ahead if you wish. Moreover, worth mentioning that it is a great dressing to have on hands. Often I double or triple the ingredients to use that extra dressing in my other salads and drizzle it on top of the buddha bowls.

Vegan Watermelon Feta salad/healthy, easy
- 350 gr of watermelon
- 250 gr of cucumber
- 1 medium avocado
- 100 gr vegan feta
For the dressing
- Juice and zest 1/2 a lemon
- 1 tbsp of olive oil
- 1 tsp of maple syrup
- 2 tsp of dijon mustard
- small bunch of basil
- salt pepper
- Cut watermelon, cucumber and avocado
- Mix all the ingredients for the dressing
- In the salad bowl, combine all the ingredients watermelon, cucumber and 3/4 of the avocado
- Drizzle the prepared dressing over the salad and toss to combine
- Add the remaining avocado and cubed feta on top and garnish it with basil leaves if desired
